SSP's Lab Sweet line. The approach is to balance sweetness and clarity, without going to the extreme of HU on one side or standard burrs on the other. Two versions (V2, V3) with different leanings.

The axes show the direction the burr leans toward. Higher values mean that quality stands out more than average; lower values mean it comes through lighter.

The Lab Sweet line came to market around 2022, after SSP saw the community split between two ends: HU for extreme clarity and MP for acidic espresso. Lab Sweet tried to fill the gap in the middle — a burr that delivers deep sweetness with reasonable clarity, without compromising on either.
The approach
The geometry combines a uniform cut at the burr edge with inner teeth that differ from HU. The result is a relatively narrow particle distribution, but with fines control that promotes sweetness. Where HU minimizes fines to get maximum clarity, Lab Sweet preserves some fines that contribute to body and sweetness.
The difference between V2 and V3
The two version generations are well-known in the Lab Sweet community:
V2 — clear filter leaning. The cup carries pronounced sweetness and full body while clarity is preserved. The classic pick for people grinding mostly for filter and less for espresso. Some users report V2 produces muddier shots or an astringent edge in espresso, though this depends on the bean and the workflow.
V3 — espresso-leaning, with more structure and slightly less sweetness compared to V2. The cup in espresso comes out cleaner and more articulated, with higher flavor separation. V3 still works for filter, but most users prefer V2 for filter and V3 for espresso.
The DLC coating (Silver Knight)
What SSP calls "Silver Knight" is diamond-like carbon. Different from Red Speed (titanium nitride, which renders orange). Main advantages: very low retention (coffee doesn't stick to the burr), long life (around 1500-2000kg), and per SSP a flavor profile that stays clean over the burr's lifetime.
The difference from HU and MP
- HU: maximum clarity, light body, clean tea-like filter. Exotic.
- MP: active acidity, complex cup, bright espresso.
- Lab Sweet: sweetness and body, reasonable clarity, suited for "most cases." Considered an easier entry into specialty — doesn't require competition-grade beans to deliver a good result.
The price runs higher than uncoated HU because of the DLC, but the longer burr life offsets this over time.
