In October 2025, Bayu Prawiro of Indonesia took 2nd place at the World Brewers Cup, behind George Peng. He presented a sophisticated recipe that captured community attention: a combination of Hario Switch, Drip Assist, and Sibarist FAST filter — three tools each solving a different problem.
The 'exposure triangle' idea:
Bayu described his approach through the metaphor of the photography exposure triangle — three legs: agitation, flow, contact time. Each leg affects extraction, and you have to balance them.
The gear:
1. Hario Switch:
Immersion controls contact time. Closed = long contact and body. Open = fast and clarity. Bayu kept it closed for most of the brew, opened only at the end.
2. Drip Assist:
A Hario accessory that sits on the dripper and pours water at a uniform rate through dozens of tiny holes. It controls agitation — the most uniform possible. Instead of relying on the pourer's hand, the equipment does it.
3. Sibarist FAST:
A fast-flowing filter. Controls flow — gives fast drawdown even with finer grind.
Coffee and philosophy:
Bayu used a blend of Panama Geisha and Indonesian Excelsa — a rare combination. Geisha for delicate aroma and fruitiness, Excelsa (a relatively rare species) for body and tea-like notes.
Descending temperature — 93→91→88°C:
Like Peng, Bayu lowered temperature throughout the brew. But while Peng made a big jump (96→80), Bayu did a gradual 5°C decrease. The reason: to balance extraction naturally — early stages need more energy, later stages less.
The competition score:
Bayu presented with high competition decorum and explained the 'triangle' in detail. Judges gave him the highest score in Body and 2nd-3rd places in other categories. It was enough for 2nd place, a tiny margin behind Peng's win.
The impact:
After the competition, Drip Assist became a sought-after accessory. People saw that this gear — previously dismissed as a 'gimmick' — works excellently in advanced specialty methods. Hario Switch also strengthened as a competition dripper, not just a beginner's tool.
